1.5 kg aitchbone or silverside
¼ cup (60 ml) red wine
1 cup (250 ml) brown vinegar
2 Tbsp (30 ml) olive oil
1 onion, peeled and sliced
1 clove garlic, peeled and

salt and freshly ground black pepper to taste
¼ tsp (2 ml) ground ginger
a pinch of ground cinnamon
1 tsp (5 ml) grated lemon zest
2 Tbsp (30 ml) fresh lemon juice
4 potatoes, peeled and quartered
