Serves 4-6

  1. Cut ribs into smaller portions if preferred, then place in non-metallic container.
  2. Mix all the marinade ingredients together and pour over the ribs.  Cover and marinade in the refrigerator for about 6 hours or overnight.
  3. Remove the ribs from the marinade and bake in a preheated oven at 200 °C for 20 minutes, turning and basting frequently with the marinade.  Bring leftover marinade to the boil, and serve with the ribs.

Suitable for grilling, braaiing, roasting or pan-frying,
these delicious ribs can be adapted to your particular
cooking preference.

800 g short ribs

Marinade
¾ cup (200 ml) tomato sauce
3 Tbsp (45 ml) Worcestershire sauce
½ cup (125 ml) white or brown vinegar
½ cup (125 ml) light brown sugar
1 small chilli, seeded and chopped
salt and freshly ground black pepper to taste
