Serves 4-6

  1. Brown the meat in heated cooking oil in a heavy-based saucepan, then add the garlic and red pepper and stir-fry until soft.  Add the spinach, mushrooms, pineapple pieces, seasoning and ginger.
  2. Mix all the remaining ingredients together and add to the meat.  Stir-fry for about 2 minutes.  Serve immediately with savoury rice.

500 g beef strips
2 Tbsp (30 ml) cooking oil
1 clove garlic, peeled and crushed
1 red pepper, seeded and julienned
100 g fresh spinach, coarsely chopped
125 g button mushrooms, sliced
440 g can pineapple pieces, drained and juice reserved
salt and freshly ground black pepper to taste
¼ tsp (2 ml) ground ginger
2 Tbsp (30 ml) light brown sugar
2 Tbsp (30 ml) red wine vinegar
1 Tbsp (15 ml) sherry or port (optional)
1 Tbsp (15 ml) soy sauce
2 Tbsp (30 ml) cornflour
