500g mince
1 medium onion, chopped
1 tsp (5 ml) salt
1 tsp (5 ml) dried oregano leaves, crushed
4 flour tortillas
vegetable oil
1 medium tomato, seeded, chopped
1 Tbsp (15 ml) thinly sliced fresh basil leaves
1 cup (250 ml) shredded mozzarella cheese
¼ cup (60 ml) grated Parmesan cheese

  1. Heat oven to 200ºC.  Brown mince with onion in large, non-stick skillet over medium heat for 8-10 minutes or until beef is no longer pinkish colour, breaking beef up into small crumbles.  Pour off drippings, season with salt and oregano.
  2. Lightly brush tortillas with oil. Place on 2 large baking sheets that have not been greased.  Bake in 200ºC oven for 3 minutes.  Spoon beef mixture evenly on tortillas, top with tomato.  Sprinkle with basil, then with cheeses.  Bake 12-14 minutes or until tortillas are lightly browned and cheeses are melted.
