The best part of this recipe is that you’re free to use
any vegetables of your own choice.

2 Tbsp (30 ml) butter
1 onion, peeled and chopped
250 g (4) sausages, sliced
4 large tomatoes, peeled and chopped
2 large carrots, peeled and julienned
2 stalks celery, sliced
2 medium potatoes, peeled and cubed
4 cups (1 litre) hot beef or vegetable stock
salt and freshly ground black pepper to taste
2 Tbsp (30 ml) chopped fresh parsley or 2 tsp (10 ml) dried

  1. Heat the butter in a large, heavy-based saucepan and sauté the onion until soft.
  2. Add the sliced sausages and fry until cooked.  Add the remaining ingredients and bring to the boil for approximately 30 minutes, until the vegetables are soft.  Serve hot with bread rolls.

Serves 4-6

Variation
Substitute potatoes with 60 g uncooked pasta and add 15 minutes before ready to serve.
