2.5 kg prime rib roast
salt and freshly ground black pepper to taste
¼ cup (60 ml) olive oil

Basting Sauce
2 Tbsp (30 ml) orange marmalade
2 Tbsp (30 ml) fresh lemon juice
3 Tbsp (45 ml) olive oil
4 cloves garlic, peeled and chopped
2 tsp (10 ml) chopped root ginger
1 tsp (5 ml) soy sauce
1 Tbsp (15 ml) light brown sugar

  1. Season the beef and place on a rack in an oven roasting pan.
  2. Drizzle oil over the beef, then roast in a preheated oven at 160 °C for 15-20 minutes per 500 g, plus an additional 15 minutes for rare, or 20-25 minutes per 500 g, plus an additional 20 minutes for medium-done.
  3. For the basting sauce, mix all the ingredients together and start basting the beef after the first hour of roasting.  Keep a close watch on the roast to make sure the marmalade baste does not burn.
  4. When done, remove the roast from the pan and place on a serving platter.  Leave in a warm place for about 10 minutes before carving.
